parkBear's hoki fish pie

500g NZ hoki (or any mild white fish)
handful of onion
handful of leek
1/2 handful of garlic
handful of button mushrooms
lemon thyme
tb of gluten free flour
cup of fish stock(or vegetable stock)
1/2 lemon
salt and pepper

*white sauce*
sour cream
gluten free flour
mixed herbs

*mashed potato*
salt and pepper

boil up the potato for the mash

fry up the garlic and onions till golden then add the leeks and mushroom. add hoki(roughly chopped), flour, stock, juice of half a lemon, and the herbs and spices. cook till liquid is evaporated

mash the potato adding lotsa butter and milk and a bit of salt

make a simple white sauce substituting some milk for sour cream

in baking dish layer fish, with the white sauce add mash potato on top, sprinkle with parmesan and cheese of your choosing(i like colby)

bung in a 160C oven for 10-15 minutes or until potato is golden

will the winter take me home?
